Zesty Olive & Ricotta Dip

Deliciously bursting with flavour! This Zesty Olive & Ricotta Dip by @miss_pollys_kitchen pairs perfectly with our infamous Hazy Alcoholic Lemonade - a refreshingly irresistible combo your guests won’t be able to resist!

 

Zesty Olive & Ricotta Dip

Ingredients

400g ricotta

4 cloves of garlic - sliced

3/4 cup olives - halved

2 tbsp capers

Lemon zest

1/4 cup of lemon juice

1/3 extra virgin olive oil

2 tbsp honey

1/4 cup of flaked almonds - toasted

Method

Heat a pan over low/medium heat.  Add the olive oil, garlic, olives, capers, lemon zest, and lemon juice.  Simmer for 10 minutes.

Stir in the honey and simmer for a further minute.  Spoon the ricotta onto the base of a serving dish.

Fold the almonds into the olive sauce and spoon it on top of the ricotta with all the oil!

Serve with some warm, crispy bread or artisan crackers.
