Polly's Pesto Parmesan Pinwheels

Polly's Pesto Parmesan Pinwheels

Ingredients

1 sheet of puff pastry

1/4 cup basil pesto

1/4 cup grated Parmesan + extra to serve

5 slices of prosciutto

A couple of spoonfuls of relish

A couple of spoonfuls of pesto

 

Method

Preheat the oven to 180 fan bake.

Let the puff pastry thaw out slightly.

Spoon the pesto over the pastry sheet, then sprinkle over the parmesan.

Roll the pastry into a log.  Slice into roughly 12 slices.

Place onto a lined baking tray.  Bake for roughly 20 minutes or until the pinwheels are lightly golden.

Slice the prosciutto into smaller pieces, roll up, and place one piece on top of the pinwheel with a small dollop of pesto and relish.
